Ruminating animals have four-chambered stomachs — the rumen, reticulum, omasum, and abomasum to support multiple digestions which systematically break down grasses with a slew of digestive enzymes, gastric juices, and amino acids. The digestive process is similar to a fermentation process with good bacteria acting to aid in digestion. Our green tripe is from the fourth chamber — nutrient-rich abomasum where gastric juices such as rennet consisting of Chymosinchymosin, a protease enzyme, and other enzymes such as pepsin and gastric lipase are secreted to continue the digestion of the food before acid chyme moves into the intestine. In addition, the green tripe is raw — gently rinsed with cold water, unprocessed, and unbleached, leaving all the natural goodness inside. Green tripe is unique as it is completely natural and contains a range of proteins, minerals, probiotics, essential fatty acids, digestive enzymes, and vitamins.
